Mango Salsa
Ingredients
- 2 T good olive oil (not flavored)
- 1 ½ Cups diced yellow onion (2 onions)
- 1 t peeled, minced fresh ginger
- 1 ½ t minced garlic
- 2 Ripe mangos, peeled, seeded, and small-diced
- 1/3 Cup freshly squeezed orange juice (not from concentrate)
- 2 t Light brown sugar
- 1 t Kosher salt
- ½ t fresh group pepper
- 1 to 2 t minced fresh jalapeno pepper, to taste OR
- ½ T Calabrian ground pepper with 1 T of Calizo Hot Sauce
- 2 t Minced fresh minced leaves
Sauté’ the onions and ginger in olive oil in a large sauté’ pan over medium-low heat for 10 minutes or until onions are translucent
Add garlic and cook 1 more minute.
Add mangos, reduce heat to low and cook for 10 more minutes.
Add the orange juice, brown sugar salt, pepper, and jalapenos (or hot sauce mixture)
Cook foe 10 more minutes or until orange juice is reduced, stirring occasionally
Remove from the heat, add the mint. Serve warm or at room temperature or chilled.
